Red Beans w/ Smoked Turkey Wings - Stove Top and Crock Pot Methods

Makes Approx. 6 to 8 servings
Ingredients
2¾ to 3 Quarts Water
1 Smoked Turkey Wing
1 Pound Dry Small Red Beans
1/3 Cup Onion, chopped
1/3 Cup Celery, chopped
1/3 Cup Green Bell Pepper, chopped
2 Cloves Garlic, minced
1 Tablespoon Fresh Thyme, chopped
2 Tablespoons Grand Diamond All-Purpose Seasoning
Directions
Tip: Place the red beans on a sheet pan and go through them with your hands. Find and remove any small pebbles or other objects then rinse the beans under running water. You do have the option to soak the beans in a bowl of water for 6 to 8 hours or overnight prior to cooking. If you do choose to soak them, simply rinse them after soaking and proceed with the recipe.)

Stove Top Method
Place the water, or chicken stock, and the turkey wing in a large stock pot over medium high heat. Place a lid on the pot and allow the smoked turkey stock to come to a low simmer for about 1 hour.
Add the red beans, onions, celery, bell pepper, garlic, thyme, and Grand Diamond Seasoning to the simmering stock and stir. Turn the heat down to low, place the lid back onto the pot, and allow the beans to simmer for 2 hours. Feel free to occasionally stir the beans every half hour or so during the cooking process.
Once done, serve the beans over your favorite rice, or with cornbread, or just enjoy this dish on its own.

Crock Pot Method
Place all of the ingredients, the cleaned beans, chicken stock, turkey wing, vegetables, and seasonings, into the crock pot. Cover with the lid and cook on LOW for 7 to 8 hours.
